Homemade Dumplings for Soup

Homemade Dumplings for Soup
Servings
Ingredients
- 4 beaten eggs
- 4 half egg shells filled with water
- 3 cups flour
- 1/4 tsp salt
Instructions
- Beat eggs and water and gradually add flour.
- Drop small spoonfuls into boiling water until they float.
- Remove from water.
Notes
I use my Kitchen Aid Mix Master. You know this is a “tried & true” recipe by the fact that you use half an egg shell as a unit of measurement. I love lots of dumplings and this is the perfect amount for Amy’s Super Quick Homemade Chicken Noodle Soup recipe. I also made the dumpling separately from the soup. When they float, they are done. Then I added them to the soup and simmered with everything else.

I have a really easy recipe for potato dumplings which I make everytime I make spareribs and sauerkraut. It is 1 cup mashed potatoes (can use instant) cooled, 1 egg, 1 cup flour and 1 tsp salt. Mix everything together and drop in your hot soup or spareribs. I cover them for like 10-15 min and then 10-15 min uncovered. They are so good! This recipe comes from my Great Aunts Emily and Helen. Hope you all enjoy them as much as I do. Yikes now I am hungry for them…..
