Tater Tot Breakfast Casserole

  • 1 pound bacon - cooked and chopped or crumbled
  • 1 bag (32 ounces) frozen tater tots
  • 1 package (1-oz) dry ranch dressing mix
  • 2 to 3 cups shredded cheddar cheese
  • 12 eggs
  • 2 cups milk
  • 3 to 4 green onions - chopped (optional)


  • Preheat oven to 350 degrees.
  • Spray a 9 x13 inch casserole dish with cooking spray.
  • Place tots in the bottom of the dish.
  • Whisk together eggs, Ranch mix and milk. Pour over tater tots. Top with cheese and bacon.
  • Cover with foil and refrigerate at this point, if baking later.
  • You can make night before and bake in the morning.
  • Bake covered with foil for 40 minutes.
  • Uncover and bake another 10 to 20 minutes or until eggs are set.
  • Top with green onions if you like before serving.
