Tater Tot Breakfast Casserole

Ingredients
- 1 pound bacon - cooked and chopped or crumbled
- 1 bag (32 ounces) frozen tater tots
- 1 package (1-oz) dry ranch dressing mix
- 2 to 3 cups shredded cheddar cheese
- 12 eggs
- 2 cups milk
- 3 to 4 green onions - chopped (optional)
Instructions
- Preheat oven to 350 degrees.
- Spray a 9 x13 inch casserole dish with cooking spray.
- Place tots in the bottom of the dish.
- Whisk together eggs, Ranch mix and milk. Pour over tater tots. Top with cheese and bacon.
- Cover with foil and refrigerate at this point, if baking later.
- You can make night before and bake in the morning.
- Bake covered with foil for 40 minutes.
- Uncover and bake another 10 to 20 minutes or until eggs are set.
- Top with green onions if you like before serving.
