Acorn Squash in the Microwave
Servings
Ingredients
- 2 acorn squash
- 2 tablespoons water
- 1/2 cup brown sugar
- 4 tablespoons butter
- 1/4 teaspoon salt
Instructions
- Cut squash in half. Scoop out inside and discard seeds.
- Place water in bottom of a microwave-safe dish. Place squash cut side down in dish.
- Microwave on high for 6 to 8 minutes or until just tender.
- Turn squash cut side up.
- Sprinkle each with a little salt. Fill centers of squash with brown sugar and butter.
- Microwave on high for 4 minutes or until heated through.

I have always made acorn squash in the oven. This method is definitely something I will try. Thank you for sharing.
As a Diabetic I am going to do this but omit the sugar.
