Crazy Good Carrot Cake
Servings
Ingredients
- 2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 1/2 cups sugar
- 1 cup oil
- 3 eggs
- 2 teaspoons vanilla
- 3 cups shredded carrots
Cream Cheese Frosting:
- 8 ounces cream cheese - softened
- 1 stick or 8 tablespoons unsalted butter - softened
- 1 pound powdered sugar
- 2 teaspoons vanilla
Instructions
- In a large bowl, whisk together the first 5 ingredients.
- Add remaining cake ingredients.
- Mix until well combined.
- Spoon into two 8 inch greased cake pans.
- Bake 350 degrees for 30 minutes or until toothpick comes out cleans.
- Cool. Meanwhile beat together all frosting ingredients for about 5 minutes until light and fluffy.
- Once cake is cooled, frost.
Notes
For more layers you can cut the 2 rounds of cooled cake in half to make a 4 layer cake.
