Cranberry Crostini

  • 1 French baguette - cut into 1/2 inch slices
  • 1/4 cup Olive oil
  • 1 round Brie cheese - sliced into pieces
  • 1 to 1 1/2 cups Cranberry chutney or cranberry sauce
  • 1/4 cup Fresh chopped Italian parsley


  • Preheat oven to 350 degrees.
  • Brush a little olive oil on the top of each slice of baguette and place onto a large baking sheet.
  • Bake 5 to 10 or until they are a light golden brown.
  • Spread each with piece of toasted bread with some of my homemade Cranberry Chutney or Cranberry Sauce.
  • Top each piece with a slice of brie.
  • Return to the oven and bake another few minutes until brie is melted.
  • Serve right away with chopped parsley on top.
