Peanut Butter Sandwich Kabobs

4 slices soft wheat bread
1/2 cup peanut butter
1/2 cup honey
3 to 4 tablespoons granola (optional)
4 skewers
Additional fresh fruit such as kiwi, strawberries, grapes or pineapple

Trim crusts from bread. Gently press bread or flatten with a rolling pin. Spread each slice with 2 tablespoons peanut butter and 2 tablespoons honey. Sprinkle a little granola on each piece of bread.

Cut each slice in half. Firmly roll up each and thread the roll-ups and fruit onto skewers and serve as kabobs.

    Though a great idea, I’m pretty sure my son’s school would not allow him to have the sharp sticks used to hold it all together. Schools are getting very wary of any item that could be used as a “weapon”. Ridiculous, I know, but sadly it’s the way things are these days.
