BLT Pasta Salad

  • 16 ounces rotini pasta, cooked and cooled
  • 1 1/2 cups grape or cherry tomatoes, halved - or 1 cup diced seeded tomatoes
  • 3/4 pound thick cut bacon, cooked and chopped in one inch pieces. - Save a bit to garnish top.
  • 1/2 red onion sliced thin
  • 1/2 cup shredded cheddar cheese - Save a bit to garnish top.
  • 1 1/4 cups mayonnaise
  • 3 tablespoons red or white wine vinegar
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon freshly ground black pepper
  • 1 1/2 cups garlic and herb croutons


  • In a large bowl, whisk together mayo, vinegar, Parmesan cheese, garlic salt and black pepper.
  • Combine the cooled pasta with tomatoes, bacon, red onion and cheddar cheese if using.
  • Add the dressing and gently toss to coat. Cover and refrigerate about an hour or two or overnight.
  • Before serving, stir in lettuce and croutons. Reserve a few croutons for the top.
  • Top with the extra cheese, bacon, and some croutons right before serving.
