Bleu Cheese Ball Turkey
Ingredients:
1 block (8 ounces) cream cheese, softened
1/2 cup crumbled bleu cheese
2 scallions, chopped
A few dashes hot sauce
1/2 cup chopped Italian parsley
1 cup chopped walnuts or pecans, toasted

Directions:
Mix first 4 ingredients together with a mixer or in food processor. Use plastic wrap to roll into al ball. Chill for a few hours or overnight until firm. Unwrap and roll cheese ball in parsley and then nuts. Refrigerate until ready to serve. Serve on a plate surrounded by crackers.

Notes:
For the holidays double or triple this recipe and make a turkey shaped cheese ball. It’s easy! It makes a great centerpiece for your holiday spread! Make the cheese ball into more of an oval shape. Stick 6 to 10 large oval shaped crackers in the back of the cheese ball to look like the back “feathers”. Place pecans halves around the rest of the cheese ball to look like the rest of the “feathers”. Cut 2 pieces of fresh red bell pepper into strips to form the head and neck. Use a piece of yellow squash or a piece of carrot cut into a triangle to look like the turkey beak.
