Garlic and Herb Mashed Potatoes

6 large potatoes, peeled and cubed
1 pkg (5.2 ounces) Boursin cheese with garlic and herbs
1/4 to 3/4 cup milk
Salt and pepper
2 tablespoons melted butter (optional)
2 tablespoons chopped flat-leaf parsley or chives (optional)

Boil potatoes until fork tender and drain. Mash potatoes with potato masher until smooth. Add Boursin cheese and 1/4 cup milk. Mix well. If it’s too thick, add a little more milk. Season with salt and pepper. Place potatoes in a casserole dish that has been sprayed with cooking spray. Drizzle with melted butter. Cover with foil and bake in a pre-heated 350 degree oven for 20 minutes. Uncover and bake another 10 to 15 minutes or until heated through. Sprinkle fresh parsley or chives on top before serving.
