Door County Cherry Chicken Salad

6 chicken breasts, cooked and shredded or diced
1 cup dried cherries
1 1/2 cups celery, finely diced
2 tablespoons red onion, finely diced
1/2 cup chopped pecans, toasted (optional)
2 cups mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper
1/2 teaspoon garlic salt

In a large bowl whisk together mayonnaise, lemon juice garlic salt and pepper. Toss in remaining ingredients. Stir well. If mixture seems a little dry, add a little more mayonnaise. Add more salt and pepper if needed. Chill for 2 to 4 hours before serving. Great on croissants or in flour tortilla wraps.

    I forgot to say I am going to Door County tomorrow …The Tour of homes is on so I am going on a bus with the Shawano Woman’s Club. Bad thing is we leaving here at 6:30 a.m.

    This sounds wonderful. I always liked Chicken Salad but never thought of putting cherries in it. Thanks Amy ( I have a daughter named Amy and one named Abby) A fan
