Strawberry Bleu Cheese Salad

Strawberry and Bleu Cheese Salad

Ingredients
 

  • 10 ounces fresh spinach
  • 2 cups strawberry - cleaned, hulled and sliced
  • 1/3 cup sliced almonds - toasted
  • 1/2 cup crumbled bleu cheese - crumbled
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon  Worcestershire sauce
  • 1 teaspoon sugar - or honey
  • 2 teaspoons  Dijon mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions
 

  • In a jar with a lid shake together olive oil, balsamic vinegar, Worcestershire sauce, mustard and sugar or honey.
  • In a large bowl, combine spinach, strawberries, nuts, and cheese. Save a few nuts, strawberries and bleu cheese to decorate the top.
  • Dress salad lightly right before serving. Top with the extra nuts, bleu cheese and strawberries.
  • Extra dressing can keep in the fridge for up a week.
