BLT Pasta Salad

Ingredients
- 16 ounces rotini pasta, cooked and cooled
- 1 1/2 cups grape or cherry tomatoes, halved - or 1 cup diced seeded tomatoes
- 3/4 pound thick cut bacon, cooked and chopped in one inch pieces. - Save a bit to garnish top.
- 1/2 red onion sliced thin
- 1/2 cup shredded cheddar cheese - Save a bit to garnish top.
- 1 1/4 cups mayonnaise
- 3 tablespoons red or white wine vinegar
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon garlic salt
- 1 teaspoon freshly ground black pepper
- 1 1/2 cups garlic and herb croutons
Instructions
- In a large bowl, whisk together mayo, vinegar, Parmesan cheese, garlic salt and black pepper.
- Combine the cooled pasta with tomatoes, bacon, red onion and cheddar cheese if using.
- Add the dressing and gently toss to coat. Cover and refrigerate about an hour or two or overnight.
- Before serving, stir in lettuce and croutons. Reserve a few croutons for the top.
- Top with the extra cheese, bacon, and some croutons right before serving.
