Super Easy Pulled Pork Sandwiches

Ingredients
 

  • 2 onions - sliced
  • 4 pound boneless pork butt, shoulder or pork loin roast
  • 3 teaspoons salt
  • 2 teaspoons pepper
  • 18 ounces barbecue sauce
  • 12 ounce ginger ale
  • 14 buns

Instructions
 

  • Place half of the onions into the crock pot.
  • Trim some of the fat from roast . Season roast well with salt and pepper.
  • Place the roast on top onions.
  • Pour ginger ale over the top. Then add remaining sliced onions.
  • Cover and cook on low for 8 to 10 hours, until it falls apart.
  • Remove about 1/2 cup of the cooking liquid. Set aside. With two forks, shred the pork, removing any fat.
  • Add the barbecue sauce. Mix well.
  • Cook for an additional hour on high.
  • Add some of the cooking liquid and or some water if needed and mixture gets dry.
  • Serve pulled pork on buns.
