Slow Cooker BBQ Chicken Sandwiches

Slow Cooker BBQ Chicken Sandwiches

Ingredients
 

  • 6 to 8 Boneless, skinless chicken breasts
  • 2 tsp Garlic salt
  • 1 tsp Black pepper
  • 1 Onion thinly sliced
  • 2 cups Chicken stock
  • 1 bottle (18 ounces) Barbecue sauce
  • Additional barbecue sauce, if desired
  • Buns for sandwiches
  • Pickles (optional)

Instructions
 

  • Place onion in the slow cooker.
  • Place the chicken breasts on top. Season chicken with salt and pepper.
  • Pour chicken stock and about half of the bottle of the BBQ sauce over the chicken.
  • Cover and cook on low for 3 to 5 hours.
  • Shred chicken and add the remaining BBQ sauce.
  • Stir to coat and heat on high for 10 to 15 minutes.
  • Serve pulled chicken on buns with extra BBQ sauce and pickles on top if you like.

    Amy, It was nice to see you on TCL! I am going to make both the pulled chicken and pork – how far in the recipe can I go before hand and then finish on the day of the superbowl?

    Can the chicken stock be omitted and use all BBQ sauce instead? If so, does that change the cooking time?

      Hi Amy. Yes you could leave out the chicken stock. Sure use all BBQ sauce and maybe 1/2 cup of water. I’d get an extra bottle of BBQ sauce in case you want to add a bit more at the end when the chicken is all shredded. Thanks! -Amy

      Hi Chuck. This makes 16 to 20 sandwiches depending on how many chicken breasts you use and how big they are. It’s great for crowds and leftovers freeze well and can be reheated in the microwave! Thanks! -Amy
