Ham, Brie, and Pear Panini

Ham PaniniIngredients:
4 slices sourdough or firm white bread
1 tablespoon fig or apricot jam
2 tablespoons mayonnaise
6 thin slices deli ham
1 firm but ripe pear cut into 6 slices
6 slices brie cheese
A few tablespoons butter, softened

Directions:
In a small bowl, mix together jam and mayonnaise. Preheat a panini maker, grill pan, skillet or griddle. Place two slices of bread on a work surface and spread half the mayonnaise mixture on each slice. Divide ham between two sandwiches and arrange on top. Add a few slices of pear and then top pear with slices of cheese.

Place a slice of bread on top and spread some butter on it. Place the sandwiches buttered side down in the pan, then butter the top side. Grill until nicely browned on one side and then flip and grill the other side. Cut each sandwich in half and serve right away.

Notes:
This is a great “grown-up” grilled cheese recipe but I think the kids will love it, too! Apples work well as an alternative for pears.
