Roasted Cauliflower

1 medium head of cauliflower, cut into florets
3 cloves minced garlic
Juice from about half a lemon
2 to 3 tablespoons olive oil
salt and freshly ground black pepper
1/4 cup freshly grated Parmesan cheese (optional)

Preheat oven to 425° degrees. In a large bowl toss the cauliflower with minced garlic and lemon juice. Drizzle with olive oil and toss so that the florets are lightly coated with oil. Spread the florets out into a single layer on the roasting pan. Sprinkle with salt and pepper. Roast for 18 to 30 minutes, or until the top is lightly brown. Remove the cauliflower from the oven and sprinkle with Parmesan cheese if you like. Serves 4.
