Riffs on the Reuben in the Twin Cities

Riffs on the ReubenIt’s one of my favorite sandwiches. Corned beef, Swiss cheese, sauerkraut and Thousand Island dressing. Grilled and toasty with gooey melted cheese. Come on! What’s not to love about a reuben? I was on TV in the Twin Cities with some fun, new ways to the enjoy classic reuben sandwich. What about making one giant reuben. My rolled reuben sandwich using puff pastry is so pretty and delicious! Easy too! Like egg rolls? My reuben egg rolls make a really fun appetizer with spicy brown mustard for dipping. Everybody loves them! You know me. I love soup! My reuben soup is a great way to use up leftover corned beef. It’s rich and cheesy. Topped with rye croutons. Wow! You need to make this!

Are you a reuben lover too? If you have any other riffs on the reuben or any fun recipes for St. Paddy’s Day, please share!
