Ingredients
- 2 1/2 cups mayonnaise - you can use lite
- 2 tbsp sugar
- Salt and pepper to taste
- 1 head lettuce - cut up
- 1 cup diced celery
- 2 cups frozen peas, or thawed fresh peas
- 4 scallions - chopped
- 1 cup diced tomatoes or red peppers
- 4-5 eggs hard boiled eggs - chopped
- 2 cups shredded cheddar cheese
- 1/2 pound bacon - cooked and crumbled
Instructions
- Mix together mayo and sugar and season with a little salt and pepper.
- In a 13 x 9 pan or a pretty glass bowl layer chopped lettuce.
- Then layer celery, peas, onions, tomatoes or red peppers and eggs.
- Carefully spread mayo mixture over the top.
- Top with bacon and cheese.
- Cover tightly and chill for a least 4 hrs.
