Chocolate Pancakes

Ingredients:
2 eggs
1 1/4 to 1 1/2 cups milk
3 tablespoons butter, melted (plus extra butter for frying pancakes)
1 1/2 cups flour
1/3 cup cocoa powder
1/2 teaspoon salt
2 teaspoon baking powder
3 tablespoons sugar
1/2 cup chocolate chips (optional)
Warm chocolate syrup or Strawberry Syrup (optional)
Powdered sugar (optional)
Directions:
Whisk together flour, cocoa, salt, baking powder, and sugar. Set aside. In a medium bowl, beat the eggs and 1 1/4 cups milk until light and foamy. Stir in melted butter. Add in flour mixture and mix until just blended. If batter looks thick, add a bit more milk. Fold in chocolate chips if using.
Add a little butter to large non-stick pan. Drop by 1/4 cupfuls onto a griddle or non-stick skillet heated to medium heat. Cook until bubbles start to form. Flip over and cook another 1-2 minutes. You can serve with my homemade strawberry syrup or warm chocolate syrup and powdered sugar on top if you like. Also great served with fresh berries on top.
