4 cups chopped, peeled apples
2 cups sugar
1/2 cup oil
2 beaten eggs
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
1 cup chopped walnuts, divided (optional)

Cream Cheese Frosting:
8 ounces cream cheese, softened
1 stick or 1/2 cup butter, softened
2 teaspoons vanilla
3 1/2 to 4 cups powdered sugar

Preheat oven to 350 degrees. Grease and flour or spray a 9 x 13 inch pan with baking spray. In a large bowl, mix apples and sugar together and let sit for 15 to 30 minutes. Add oil, eggs, and vanilla to the apples and mix well. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, salt, and soda. Add to apple mixture; stir just until combined. Stir in 3/4 cup nuts, if using. Spoon into prepared pan. Bake for 30 to 40 minutes. Cool completely and frost with cream cheese frosting. Sprinkle remaining 1/4 cup of nuts on top if you like.

For the Cream Cheese Frosting use a mixer to beat cream cheese and butter until smooth. Add vanilla and gradually add powdered sugar. Beat until smooth.
