Strawberry and Chocolate Stuffed French Toast

Ingredients
 

  • 4 eggs
  • 3/4 cup milk
  • 1 block (8 ounces) cream cheese softened
  • 1/4 cup powdered sugar - plus extra for sprinkling on top
  • 1/4 tsp cinnamon
  • 12 slices white bread
  • 1 1/2 cups sliced fresh strawberries
  • 1/4 cup semi-sweet chocolate chips
  • 3 to 4 tbsp butter
  • Strawberry syrup - optional

Strawberry Syrup Ingredients:

  • 3 to 4 cups fresh or frozen strawberries
  • 1/4 to 1/2 cup sugar
  • 1 tbsp fresh lemon juice

Instructions
 

  • In a small bowl, whisk together the eggs, milk, and cinnamon.
  • In another bowl beat together cream cheese and powdered sugar until smooth.
  • Spread the cream cheese on half of the bread slices and top with a few strawberry slices and chocolate chips.
  • Top with the remaining 6 bread slices and press down to seal.
  • Melt some butter in a large non-stick skillet or on a griddle over medium-low heat.
  • Dip the sandwiches in the egg mixture for a few seconds on each side.
  • Cook the sandwiches until golden brown, 2 to 3 minutes per side.
  • Serve with powdered sugar on top and strawberry syrup if you want to be seriously decadent!

Strawberry Syrup Directions:

  • In a medium saucepan combine all the ingredients and bring to a boil.
  • Lower the heat and simmer a few minutes or until syrup thickens a bit.
  • Remove from the heat and let cool down a bit before serving.
  • You can mash up strawberries if you like.
  • Remove from heat and let cool before serving.
