Texas Caviar

Texas CaviarIngredients:
2 cans (15 ounces) black eyed peas, drained and rinsed
2 cans (10 ounces) shoe peg corn, drained OR
2 1/2 cups corn cut fresh off of the cob
2 cans (15 ounces) black beans, drained and rinsed
1 cup red onion, finely diced
1 1/2 cups green pepper, finely diced
2 to 4 jalapeno peppers, seeded and finely chopped (optional)
4 tomatoes, seeded and diced
2 ripe avocados, diced (optional)
1 cup cilantro, chopped
1 bottle (12 ounces) Zesty Italian dressing

Directions:
Mix all ingredients, except avocado, in a large bowl. Cover and refrigerate until ready to serve. Add avocados just before serving. Serve with tortilla chips or scoops.
