Sweet Potato Casserole with Marshmallow Topping

Sweet Potato CasseroleIngredients:
3 to 4 large sweet potatoes, peeled and boiled until tender, or 1 can ( 29 ounces) yams, drained
1 egg
2 tablespoons melted butter
pinch of salt
1/3 cup sugar
1/2 tsp. cinnamon
1 tsp. vanilla extract
2 cups mini marshmallows

Directions:
Heat the oven to 350 degrees. Combine the sweet potatoes, egg, butter, salt, sugar, cinnamon, and vanilla extract in a bowl and mix with an electric mixer on medium speed for 2 to 3 minutes. Spoon the mixture into a 2-quart baking dish that has been sprayed with cooking spray. Bake uncovered for 25 minutes. Top with the marshmallows and broil for a minute or two until marshmallows get toasted. Serves 4 to 6. You may want to double the recipe!
