My Grandmother’s Tomato Pudding

Ingredients:
1 1/2 cups light brown sugar, packed
1 can (15 ounces) tomato puree
1/4 cup water
4 cups bread cubes, crusts removed
1 stick butter melted
Pinch of salt and pepper

Directions:
Spray a 1 1/2 quart baking dish with cooking spray. Place bread cubes in the dish. Pour melted buter over the top. Toss to coat. In a pan heat tomatoes, brown sugar, and water until sugar dissolves. Season with a little salt and pepper. Pour tomato mixture over bread. Bake at 325 degrees for 50 to 60 minutes. Serve warm.

Notes:
Great holiday side dish with prime rib or beef tenderloin!
