Apricot Ginger Salmon

Apricot Ginger SalmonIngredients:
1/4 cup apricot preserves
1 teaspoon fresh minced ginger or 1/4 teaspoon dry ginger
1 teaspoon Dijon mustard
2 salmon fillets
Cooking spray

Directions:
Preheat oven to 400 degrees. Place apricot preserves, ginger and mustard in a microwave-safe dish. Heat in the microwave for 20 to 30 seconds. You can also heat in a pan on the stove for a minute or two. Stir well. Place salmon, skin side down in a baking dish that has been sprayed with cooking spray. Spoon apricot mixture over salmon. Bake for 8 to 15 minutes or until fish just starts to flake.

    I just took out some salmon for supper. I think Im going to do this but wrap it in tinfoil and cook it on the grill. Sounds so yummy.
