Sweet Potato Casserole with Rice Krispies Topping
- 2 large cans (23 ounces each) sweet potatoes - drained
- 1 cup granulated sugar
- 1/2 cup melted butter
- 2 eggs - beaten
- 1 teaspoon vanilla
- 1/3 cup milk
- 1/8 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 2 cups Rice Krispies
- 1 cup chopped pecans - optional
- 1 cup brown sugar
- 1 stick butter - melted
- Combine all ingredients and spoon over casserole.
- Bake for 20 to 40 minutes in a preheated 400-degree oven until potatoes are warm and topping is golden.
