Sweet Potato Casserole with Marshmallow Topping
3 to 4 large sweet potatoes, peeled and boiled until tender, or 1 can ( 29 ounces) yams, drained
2 tablespoons melted butter
Pinch of salt
1/3 cup sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 cup pecans (optional)
2 cups mini marshmallows
Preheat the oven to 350 degrees. Combine the sweet potatoes, egg, butter, salt, sugar, cinnamon, and vanilla extract in a bowl and mix with an electric mixer on medium speed for 2 to 3 minutes. Spoon the mixture into a 2-quart baking dish that has been sprayed with cooking spray. Bake covered with foil for 25 to 35 minutes or until warm. Uncover and top with the pecans and marshmallows. Broil for a minute or two until marshmallows get toasted.
You may want to double the recipe and bake in a large 9 x 13 inch casserole dish!
