Sweet Chili Beef Roast

Ingredients
- 4 to 5 lb. chuck roast (or two smaller 2 1/2 pound roasts)
- 1 bottle (12 ounces) chili sauce
- 1 envelope onion soup mix
- 1 can cola
Instructions
- Place roast in slow cooker.
- Mix chili sauce, soup mix, and cola together.
- Pour mixture over the roast.
- Cover and cook on low for 8 hours or until fork tender
Notes
Cook once and turn the leftovers into a few different meals. That’s how I roll! I serve this with potatoes the first night. Later in the week, shred some of the beef and warm it with BBQ sauce on buns.  Also great shredded and tossed with a can of diced green chilis or salsa and serve warm with hot tortillas with your favorite Mexican fixin’s.

Hi Amy, I would like to cook this for my boyfriend and there’s only 2 of us, how would you cook the recipe for two people?
Hi Abbie. I’d just get a bit smaller roast. The rest of the recipe still stays the same. But, don’t get one too small! They tend to shrink down. I think leftovers are also a good thing! Thanks! -Amy
Hi Kathi. I’ve never tried it with diet. I’m afraid it might have a strange taste but, not sure? I always use a regular Coke. We love this! If you do tried a diet soda, let me know what you think. Thanks! -Amy
Can you use diet cola in this recipe?
We tried this recipe and it was delicious!! That was the best roast I have ever made and it was soooo tender. I thru some potatoes & carrots in the oven and had them with it and it was great. I loved the idea of the slow cooker liner they showed on Fox9, it was a lot less mess.
