Stuffed Pepper Kabobs

Ingredients:
1 pound sweet or hot bulk Italian sausage
approx.. 24 mini sweet bell peppers
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/2 cup zesty Italian dressing
Skewers

Directions:
Cut off the top of each pepper and scrape out the seeds and ribs. In a bowl mix together sausage, garlic, and cheese. Stuff the peppers with the mix. Don’t stuff not too tightly. Thread a few peppers on skewers. Grill the kabobs over low heat, brushing with Italian dressing. Grill about 5 minutes per side or until sausage is cooked through. Serve with marinara sauce for dipping if you like.

Notes:
If using wooden skewers, make sure to soak them in water for at least a few hours before grilling.
