1 block (8 ounces) cream cheese, softened
1/2 cup apricot jam
1/2 cup mango chutney
1-1/2 tablespoons curry powder
1/2 cup flaked coconut
3 scallions, chopped
1/2 cup chopped cilantro
1/4 cup dry roasted peanuts, chopped
Pita chips or crackers

Spread cream cheese on a plate or in a pie dish. Mix together apricot jam, chutney and curry powder and spread over cream cheese. Sprinkle remaining ingredients on top. Chill until ready to serve. Serve with pita chips or crackers for dipping. Great with rice crackers. Note: You can use 1 cup of mango chutney if you’d like instead of the apricot jam. Tastes great either way!
