Sugar and Soy Grilled Salmon
In a small bowl, whisk together soy sauce, brown sugar and vegetable oil. Place fish in a glass or plastic dish or re-sealable bag. Pour soy sauce mixture over the fish, turning to coat. Cover dish or seal bag and refrigerate for up to 2 hours. Remove fish from marinade. Season with a little salt and pepper. Lightly oil or spray grill with cooking spray. Place salmon on grill, skin side down. Grill salmon 6-8 minutes per side, or until fish just starts to flake with a fork. Serve with lime or lemon wedges.
