Chicken and Veggie Kabobs

Chicken and Veggie Kabobs

Ingredients
 

  • 1 3/4 cups bottled Italian salad dressing (we like Wish-bone)
  • 2/3 cups western dressing
  • 4 to 6 boneless, skinless chicken breast halves - cut in 1 inch pieces
  • 4 to 6 cups vegetables (bell pepper pieces, red onion pieces, zucchini, cherry tomatoes and mushrooms)
  • Skewers

Instructions
 

  • Stir together both dressings.
  • Alternately thread pieces of chicken and veggies on the skewers.
  • Place the kabobs in a 9″ x 13″ glass pan.
  • Pour all but about a half cup of the marinade over the kabobs. Turn kabobs to coat.
  • Refrigerate the extra reserved marinade in a covered container.
  • Cover the kabobs with plastic wrap and refrigerate for up to 24 hours.
  • Remove kabobs from marinade.
  • Grill or broil kabobs, turning and basting with the extra reserved marinade until vegetables are tender and the chicken is cooked through.

  1. Can you provide a brand name for Western dressing Lived in the Chicago area for 4 years and never saw it. Of course, I wasn’t looking for it!

    Hi Amy-not familiar with western dressing-have never seen it here-Hamilton, Ontario,Canada.
    What is it similar to?

      Hi Marion. Western dressing is a bottled orange colored salad dressing. You can find it at any grocery store in the US. If you can’t find it in Canada you can use Russian dressing or French dressing. Hope that helps! Thanks! -Amy

    Hi Susan. I would roast them in a pre-heated 425 degree oven for about 20 to 30 minutes or until chicken is cooked through. You can even broil them the last few minutes to caramelize the veggies. Thanks!
