Banana Peanut Butter Stuffed French Toast

  • 8 slices Firmer bread (not the real soft stuff)
  • 2 to 3 ripe Bananas
  • 1/2 to 3/4 cup Peanut butter
  • 4 Eggs
  • 1/3 cup Heavy cream or milk
  • 2 tsp Vanilla
  • Pinch salt
  • 1/2 tsp Cinnamon
  • 2 to 3 tbsp Butter
  • 2 tbsp Powdered sugar - optional
  • 1/2 to 3/4 cup Honey


  • Spread peanut butter on each slice of bread.
  • Peel banana and slice bananas.
  • Place sliced bananas to cover peanut butter on 4 slices of bread.
  • Drizzle a small amount of honey on each piece of bread that does not have banana on it.
  • Place honey drizzled piece of bread on top of a piece with bananas on it to make a sandwich.
  • Repeat until you have made 4 sandwiches.
  • In a shallow dish, whisk together the eggs, cream, vanilla, salt and cinnamon.
  • Heat skillet or a griddle to medium heat.
  • Add butter and heat until it melts.
  • Dip 1 sandwich at a time into egg mixture and place into skillet.
  • Cook until golden brown, about 3 minutes, before flipping.
  • Then, cook another 3 to 4 minutes on the other side.
  • Remove from skillet and sprinkle a little powdered sugar on top.
  • Drizzle with honey.
