Banana Peanut Butter Stuffed French Toast

Ingredients
- 8 slices Firmer bread (not the real soft stuff)
- 2 to 3 ripe Bananas
- 1/2 to 3/4 cup Peanut butter
- 4 Eggs
- 1/3 cup Heavy cream or milk
- 2 tsp Vanilla
- Pinch salt
- 1/2 tsp Cinnamon
- 2 to 3 tbsp Butter
- 2 tbsp Powdered sugar - optional
- 1/2 to 3/4 cup Honey
Instructions
- Spread peanut butter on each slice of bread.
- Peel banana and slice bananas.
- Place sliced bananas to cover peanut butter on 4 slices of bread.
- Drizzle a small amount of honey on each piece of bread that does not have banana on it.
- Place honey drizzled piece of bread on top of a piece with bananas on it to make a sandwich.
- Repeat until you have made 4 sandwiches.
- In a shallow dish, whisk together the eggs, cream, vanilla, salt and cinnamon.
- Heat skillet or a griddle to medium heat.
- Add butter and heat until it melts.
- Dip 1 sandwich at a time into egg mixture and place into skillet.
- Cook until golden brown, about 3 minutes, before flipping.
- Then, cook another 3 to 4 minutes on the other side.
- Remove from skillet and sprinkle a little powdered sugar on top.
- Drizzle with honey.
