White Bean Chicken Chili

White Bean Chicken Chili

1 onion, diced
1 green pepper, diced
3 tablespoons olive oil
2 teaspoons garlic salt
½ teaspoon black pepper
2 jars (48 ounces) or 6 cans (15 ounces) Great Northern Beans, drained
4 boneless, skinless chicken breast halves, cooked and shredded
4 cups chicken stock
1 jar (16 ounces) chunky green or red salsa (I like to use green salsa)
2 tablespoons ground cumin

In a big pot, heat olive oil and saute’ onion and green pepper for a few minutes until they start to get soft. Season with garlic salt and pepper.
Dump the rest of the ingredients in the pot and simmer on low to medium heat for 20 to 30 minutes. You can use a potato masher to mash up the beans a bit and thicken the chili. If it gets to thick add more stock or a little water. Serve with your favorite chili fixin’s.

    Saute onions,etc., in only 1 T of EVO & add water or broth if needed as onions will sweat & saute with less oil = less calories. Use 1 1/2 to 2 cups chopped/shredded rotisserie chicken for a shortcut. I used 3 cups of chicken broth and 1 cup of water to cut the salt a bit as I had no low sodium broth and also used Trader Joes’s Salsa Verde. Cooked my soup longer so need to smash my beans. Try using garlic POWDER and not garlic salt, especially if using regular broth and not low sodium. I crunched a small amount of low salt corn chips on top. Delish!

      Hi Cindy. It’s just me. No nutritionist on my staff at this point. Maybe some day. It is a pretty healthy chili! -Amy

    Just wondering nutrition facts on this delicious soup. I just joined weight watchers and this soup seems to be right up weight watchers alley. Just need the nutrition count to do the math. Thanks and thanks for such a wonderful soup.

      Linda – you can just put the ingredients and servings into the Weight Watchers recipe builder and it will give you the points plus value. I know it is an extra step but long term it’s great because all your favorite low point recipes are in one place.

    very similar to one i make but i also use a can of diced tomatos the ones with chili seasoning or plain also calls for green chilis I use med for a bite but u can use the mild or hot depending on ur taste. I buy the chopped ones rathr then the whole and chop them myself
