Cranberry Chicken Bake

Cranberry Chicken Bake

Ingredients
 

  • 4 chicken breasts - boneless, skinless
  • 1 can (14 ounces) whole-berry cranberry sauce
  • 1 cup Russian or Catalina salad dressing
  • 1 envelope dry onion soup mix
  • 1/2 cup water

Instructions
 

  • Preheat oven to 375 degrees.
  • Whisk together cranberry sauce, dressing and dry soup mix. Whisk in water.
  • Spray 9 x 13 inch baking dish with cooking spray.
  • Place chicken in baking dish.
  • Pour sauce mixture over chicken breasts.
  • Cover with foil.
  • Bake for 1 hour covered. Uncover and continue baking another 25 to 30 minutes uncovered or until the chicken is super tender.

Notes

Great with wild rice and green beans! You can also make this in the slow cooker. Use a slow cooker liner or spray the slow cooker with cooking spray. Place chicken on the bottom. Pour remaining ingredients on top. Cook 4 to 6 hours on low.  You can also use Western salad dressing instead of Catalina or Russian.

  1. I plan to make this with frozen cranberries and Stevia, which will cut down on the carbs. H have diabetes, so I have to be aware of carbs. Sounds very good.

    what is Western Dressing? Never heard of. I even look today at my Publix, just to see if I had missed out on a new thing. Russian, Catalina, yes. No western?? I’m cooking this tonight~! sounds great. I’m going to try with fresh cranberries it this is a hit.

      Maybe it’s a Midwestern thing. Western is a bottled dressing a lot like Catalina or Russian Dressing. It’s red and makes. great marinade. But, I usually use Russian dressing for this. Fresh Cranberries area a great idea! Let me know!

    This was delicious. A definite keeper recipe. We swapped out the chicken breasts for boneless thieghs b/c I am not a fan of white meat b/c it’s so dry but we want to try it again with the breast meat. We may even try making
    the sauce with pork.

      Amy can fat free french dressing be used in place of the russian to make a healthier sauce?

  11. Sure Joan. Just heat the fresh cranberries in a sauce pan with water and sugar. Cook until the cranberries start to pop and cook down. Sometimes I add a little orange zest and cinnamon too! -Amy
