Zucchini Gratin

4 tablespoons butter, divided
1 yellow onions, sliced thin
4 to 5 medium sized zucchini, sliced 1/4-inch thick
salt and pepper
2 cloves garlic, minced
2 tablespoons flour
2 eggs
3/4 cup of half ‘n half or milk
1/2 cup grated Parmesan cheese

Preheat the oven to 400 degrees F. Melt 2 tablespoons butter in a non-stick large skillet and cook the onions over low heat until tender. Add the remaining butter to the skillet. Then add zucchini and cook 5 to 7 minutes or until it just starts to get tender. Add garlic and a little salt and pepper and cook another 30 seconds stirring often. Add flour to the pan and toss with zucchini to coat. In a bowl whisk together eggs and half ‘n half or milk. Place zucchini in a medium size casserole dish that has been buttered or sprayed with cooking spray. Pour egg mixture over the top. Sprinkle top with Parmesan cheese. Bake about 30 minutes or until bubbly and golden on top.
