2 salmon filets, about 6 oz. each
2 teaspoons olive oil
Salt and pepper
2 to 3 tablespoons prepared basil pesto
Preheat oven to 400 degrees. Line a baking sheet or pan with foil. Place a little oil on the foil. Put fish on top of foil, skin side down. Season fish with a little salt and pepper. Spread a layer of pesto on top of the salmon. Bake for 12 to 18 minutes. You can also grill the salmon. Just place the foil on the grill with the fish on top. Grill over medium heat for about 10 to 12 minutes. Great with rice or couscous and a salad!
