Bacon Wrapped Stuffed Chicken Breasts

4 boneless chicken breasts
Salt and pepper
4 pieces bacon
2 cups fresh baby spinach
1 cup crumbled feta cheese
2 tablespoons olive oil or Italian Dressing
Plain wooden toothpicks (optional)

Preheat oven to 375 degrees. Pound out chicken breasts a bit until they are a little thin. Season chicken on both sides with a little salt and pepper. Lay a half cup of spinach on each chicken breast. Sprinkle a few tablespoons of feta cheese on top of the spinach. Roll up tightly. Wrap bacon strip around each chicken breast. Secure with toothpicks if desired.  Drizzle with oil or Italian Dressing.  Bake for 25- 45 minutes or until chicken is cooked through. Notes: You can also cut a pocket in the chicken breasts and stuff spinach and cheese in the pocket if you prefer not to pound and roll it.
