Ingredients:
2 cups all-purpose flour
3/4 cup sugar, plus a little extra sugar or raw sugar for sprinkling on top
2 teaspoons baking powder
1/4 teaspoon salt
1 cup chopped fresh cranberries
2/3 cup milk
1/4 cup butter, melted
1 tablespoon orange zest
1/2 teaspoon vanilla extract
1 large egg, lightly beaten
Cooking spray

Directions:
Preheat oven to 400°.

Combine flour, 3/4 cup sugar, baking powder, and salt in a large bowl. Whisk together. Add cranberries and toss to coat. In another bowl combine milk, butter, zest, vanilla, and egg. Mix well. Add wet ingredients to flour mixture, stirring just until moist. Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle a little extra sugar or raw sugar on top if you like to make the muffin tops look pretty. Bake at 400° for 18 minutes or until muffins spring back when touched lightly in center. Remove muffins from pan immediately and cool.
