Gobble Up Appetizer Platter

Ingredients:
1 large spaghetti squash
1 red or brown firm pear, cut in half
Assorted cheese cubes
Beef sticks or summer sausage, cut in pieces
Assorted olives or grapes
Wooden skewers and a few wooden toothpicks
1 cranberry, cut in half or 2 raisins or craisins
1 piece of red pepper
Carrot cut into a small triangle
Assorted fresh peppers strips red, green, orange (optional)

Directions:
Lay spaghetti squash on its side. Use wooden skewers or toothpicks to attach half an upside-down pear to the non stem side of the squash to make the turkey’s face. Use toothpicks or pieces of the toothpicks to secure cranberries to the pear to make eyes. Next secure the carrot upside down as the beak and the red pepper as the snood. Thread several wooden skewers with assorted cheese cubes, olives and/or grapes, pieces of beef sticks or chunks of summer sausage. Insert the skewers in rows behind the pear in the back of the squash to look like feathers. You can also make small cuts in the squash in front of the skewers and insert the assorted pepper slices for even more fun edible feathers!

Notes:
You may need to stabilize the squash body by cutting a shallow slice off the bottom to form a flat base before placing on a serving platter. Also, it make be easier to place wooden skewers in the squash first and then, thread on the pieces of beef stick, cheeses, and olives. You can surround the platter with fresh veggies like broccoli, carrots, celery, and radishes. Then, I like to serve my homemade Dill Dip in a bowl on the side for dipping.
