I love New Orleans! I have had the pleasure of eating my way around the Big Easy twice now. What a cool place! And, the food! Well, let’s just say I dream about it! When I’m craving cajun, nothing hits the spot like a big pot of jambalaya. I recently met a guy originally from Louisiana who makes some seriously good jambalaya. He moved to Wisconsin and was missing the food he grew up with so he decided to do something about it. He turned a dream into reality and now, he takes this huge custom made pot all over the place to serve up some of the best jambalaya I’ve ever tasted. Sausage, chicken and rice and spices.

I have had Rod’s cooking and it is spectacular! Having grown up in Cajun country I feel qualified to say that the name ‘Authentic’ is both acurate and apt. This guy can cook Cajun.
