Snow Day

Looks like winter is back! We had a taste of spring in mid- February and it tasted and felt so good! I knew it was too good to be true! Warnings of a big blizzard meant it was time to go grocery shopping and stock up for a SNOW DAY!! While the wind was blowing and the snow was coming down, I was nice and cozy inside cooking up a storm and testing out some new recipes. One of the things I made was tomato basil soup with homemade croutons and it just hit the spot. Me, the couch, a bowl of soup and my family safe and sound and STUCK at home. My daughter, Ireland and Levi, our dog ventured out for just a minute. Then, they both came running back inside to warm up. Sometimes being stuck is a very good thing! Life is so busy these days that sadly sometimes it takes a blizzard to slow us down a bit.

    1. It was a snowflake hot cocoa day. 2 cups of heavy cream, 6 cups of milk, 1 teaspoon of vanilla, 1 package of white chocolate chips & whipped cream.

      I stir together the heavy cream, milk, vanilla and chocolate chips in a slow cooker (my fav) – cover and cook 2-2 1/2 hourr, stirring occassionally until the mixture is hot and the white chocoloate chips are melted. Stir before serving and I garnish with whipped cream. Really rich and tasty. Its fun to add a candy cane as well.

      You can make this one in a large soup pan on the stove too. Delicious!
