Ingredients:
2 pounds ground beef
1 envelope dry onion soup mix
2 large eggs, beaten
1 cup fresh breadcrumbs (more if it’s too moist, Nana never measured. She usually used crumbled up sandwich bread)
2 tablespoons water
1 1/2 cups ketchup, divided
2 teaspoons dried parsley
1 (3 ounce) can french fried onions
Directions:
Preheat oven to 350 degrees. In a large bowl, combine the ground beef, dry soup mix, eggs, 1/2 cup ketchup, water and bread crumbs. Place mixture into a 9″x 13″ pan that’s been sprayed with cooking spray and form into a large loaf. Spread remaining ketchup over meatloaf. Sprinkle with parsley. Bake for 45 to 55 minutes. Top with French fried onions. Bake another10 to 20 minutes.
