Sweet Potato CasseroleIngredients:
3 large sweet potatoes, peeled
3 eggs, beaten
1/2 cup of sugar
1 tablespoon vanilla
1/2 cup heavy cream or milk

Topping:
1 1/4 cups of chopped pecans
1 cup brown sugar
1/3 cup of flour
1 stick butter, melted

Directions:
Preheat oven to 350 degrees. Put sweet potatoes in a medium saucepan with water to cover. Boil until tender. Drain and mash. Let cool at bit. Mix the eggs, sugar, vanilla, and cream or milk with sweet potatoes. Mix well. Transfer to 2 quart casserole dish that has been sprayed with cooking spray. Mix together topping ingredients and on top of potato mixture. Bake for 30 to 40 minutes.
