grape or cherry tomatoes, halved
or 1 cup diced seeded tomatoes

thick cut bacon, cooked and chopped in one inch pieces.
Save a bit to garnish top.

grated Parmesan cheese

Instructions
In a large bowl, whisk together mayo, vinegar, Parmesan cheese, garlic salt and black pepper.
Combine the cooled pasta with tomatoes, bacon, red onion and cheddar cheese if using.
Add the dressing and gently toss to coat. Cover and refrigerate about an hour or two or overnight.
Before serving, stir in lettuce and croutons. Reserve a few croutons for the top.
Top with the extra cheese, bacon, and some croutons right before serving.
