Make sure butter is a bit soft but not too soft and NOT melted. I normally take it out of the fridge and let it sit on counter for an hour. Use a mixer to whip up butter a bit. A stand mixer works great. Whip until fluffy. Add honey and vanilla (if using). Best served right away!

This goes great slathered on my Big Batch of Homemade of Cornbread. Also great on warm rolls or toast! If making ahead you can refrigerate but make sure to remove from the fridge at least an hour before and stir well before serving.
