First, skip iceberg lettuce, instead go for Romaine lettuce. A one cup serving of romaine lettuce has more than ten times the vitamin A and more than 8 times the vitamin C. Besides fresh veggies like tomatoes, peppers, and cucumbers, why not add some fruit to your salad. Fruits like strawberries, raspberries, apples, and oranges add great color and flavor. Throw in a handful of toasted nuts like almonds, pecans, or walnuts and all of a sudden a party is starting to happen in your salad bowl. Drizzle the salad with a light homemade vinaigrette, toss it with tongs and watch it disappear!
