Rosemary Butter for Grilled Steaks

1 stick unsalted butter, room temperature
2 teaspoons minced fresh rosemary
2 scallions, white and green parts, chopped
1 to 2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper

Mix together butter, rosemary, scallions, salt, pepper and garlic in a bowl and mix well. Place a dollop of butter on hot grilled steaks. Use immediately or refrigerate for up to 5 days. Remove from refrigerator 30 minutes before using. You can also wrap well and freeze for up to 3 months.
