My Grandmother’s Tomato Pudding

Ingredients:
1 1/2 cups light brown sugar, packed
1 can (28 ounces) tomato puree
1/3 cup water
4 cups or about 8 slices white bread, crust removed and cut into cubes
1 stick butter melted
Pinch of salt and pepper

Directions:
Spray a medium size baking dish with cooking spray. Place bread cubes in the dish. Pour melted butter over the top. Toss to coat. In a pan heat tomatoes, brown sugar and water until sugar dissolves. Season with a little salt and pepper. Pour tomato mixture over bread. Bake uncovered in a preheated 350 degree oven for 45 to 60 minutes. Serve warm.

Notes:
Great holiday side dish with prime rib or beef tenderloin! You can also add 2 teaspoons dried basil to the tomato mixture before baking.
