Grilled Asparagus with Bacon and Feta Cheese

Servings 6

Ingredients
 

  • 6 pieces bacon - cooked and crumbled
  • 1 1/2 pounds asparagus stalks - washed and trimmed
  • 2 tbsp olive oil
  • Salt and black pepper
  • 1/4 cup crumbled feta
  • Juice from half a lemon
  • Zest from half a lemon

Instructions
 

  • Toss asparagus in olive oil.
  • Season with salt and pepper.
  • Grill over direct heat a few minutes on each side.
  • Don’t overcook.
  • Arrange on a platter.
  • Squeeze lemon juice over the top.
  • Sprinkle bacon, cheese and lemon zest on top.
  • Serve right away.

    Amy, I just wanted to let you know I did make the Asparagus recipe, it was delicious, actually we cooked it on the grill for just a few minutes, before I left for our Easter get together, I put 1# of Asparagus in a gallon Ziploc bag ( I had a total of three#, so I used three bags). I drizzled a little Olive Oil into each bag and rolled the Asparagus gently to coat it, that way it was ready to go onto the grill and took the rest of the ingredients with me and finished the dish after we grilled it-it worked really well. I wanted to give you that idea, just in case someone else had to take the Asparagus somewhere else like we did, the Ziploc bags worked really well, I also cut the bacon up ahead of time and had already purchased the Feta Cheese, so I just took the whole container with me, and it was ready to go.     This recipe looks wonderful, I plan to make it for Easter, this recipe does not say how many people it will serve, how do I change the recipe to feed up to 16 people?
